Lemon-Curry Vinaigrette

This is a tasty salad dressing. I love it!

1 tsp. minced lemon zest
1/4 cup fresh lemon juice
1 tsp. curry powder
1 tsp. Dijon mustard
1 tsp. honey
1 tsp. Kosher salt or sea salt
1 tsp. minced lemon zest
1 tsp. black pepper
1 tbsp. canola oil

Combine zest, lemon juice, curry powder, Dijon, honey, salt, and pepper in a small bowl.
Whisk oil into lemon mixture until well combined.
Drizzle vinaigrette evenly over salad, or toss vinaigrette with greens before dividing salads onto plates.
