Irish Soda Bread.
這是我常常做的麵包, 簡單又好吃, 它是快速麵包的一種, 用中筋麵粉(做蛋糕或餅乾用的麵粉),也可以用全麥麵粉就是全麥蘇打麵包.
用蘇打(Baking soda )取代發酵粉(yeast);Buttermilk 酪漿 ,又稱酪乳、白脫牛奶,是牛奶製成牛油之後剩餘的液體,有酸味。我覺得如果買不到Buttermilk 的話用奶粉泡的牛奶試試看, 香濃的味道, 在烤完之後, 吃起來有奶香味.因此蘇打粉跟牛奶的乳酸起了變化, 讓麵包在短短的時間烤出來就有QQ軟軟的口感.
也因為這是以前愛爾蘭人傳統的麵包因此命名.
我有兩個食譜, 第一個來源是All recipes 他用泡打粉(baking powder),烤起來也不錯。
Ingredients 成份
- 3 cups all-purpose flour (三杯中筋麵粉)
- 2 teaspoons baking powder 兩小匙泡打粉
- 1/2 teaspoon salt (半小匙鹽)
- 1/2 cup white sugar(半杯白糖)
- 1 1/2 cups buttermilk(一又半杯酪奶)
- 1/2 cup raisins(半杯的葡萄乾)~我又加半杯的小紅莓乾
- 2 eggs (兩個蛋)
- 1 tablespoon caraway seed (一湯匙的carway seed)~要不要加都行
Directions作法
- Preheat oven to 350 degrees F (175 degrees C).烤箱預熱 華氏350度, 攝氏175度
- Combine flour, baking powder, salt, and sugar. Beat eggs with buttermilk. Add the eggs and buttermilk into the flour mixture; stir in raisins.麵粉+ 泡打粉+鹽混和; 酪奶+蛋 打一打之後,所有的原料攪拌均勻.
- Pour dough onto lightly floured board. Shape into a round loaf, adding flour if necessary. Place in a lightly greased springform pan. Sprinkle top with caraway seeds if desired.這個步驟我混和之後麵團是糊狀的 , 跟食譜上寫的要捏成圓形不同 , 所以我在圓形的派盤上抹薄薄的油, 把麵糊倒到派盤.
- Bake at 350 degrees F (175 degrees C) for 1 hour or until the bottom of the loaf sounds hollow when tapped. 放到烤箱烤,烤時要注意,好幾次烤出來都是表面快焦了裡面還沒熟, 所以我上面用錫箔紙蓋住, 烤約50分鐘時檢查一下, 這時用刀子劃出十字, 順便看中心烤熟了沒, 這時就不用在蓋錫箔紙. 刀子抽出來乾乾的就是好了. 多做幾次就會越做越好的. 比面烤太就會太乾.
第二個食譜,來源是婆婆的,他用蘇打粉(baking soda),烤起來味道比較濃。

- 2 teaspoons baking soda 兩小匙泡打粉
- 4 teaspoons cream of tartar 四小匙塔塔粉
- 1/2 teaspoon salt (半小匙鹽)
- 1/3 cup white sugar(1/3杯白糖)
- 2 cups buttermilk(兩杯酪奶)
- 2 cup raisins(兩杯的葡萄乾)~我又加半杯的小紅莓乾
成份有點變, 作法一樣.
乾的料加上葡萄乾, 在加入酪奶攪拌均勻. 倒出來抹上面粉的板子揉一下,放進抹油的八英呎的派盤, 攤開, 用利刀中間切十字, 烤一個小時, 用刀子插入, 出來乾淨的就是烤好了.

Put into a greased and floured 8″ pie plate, spread out, and with a sharp knife, cut a cross in the top. Bake for 1 hour or until a knife inserted in the center comes out.
